Braised Greens

Braised Greens

2 bunches, fresh greens (mustard, kale, chard, collard, etc)
1 large apple, diced
1 tsp. olive oil
2 cloves garlic, minced
3 strips bacon, crumbled
2 Tbsp. honey
1 1/2 cups vegetable broth
1 Tbsp. black pepper

Remove stems from greens and chop leaves.  Heat olive oil in a large pot over medium heat.  Add garlic and saute about 3 minutes.  Add greens, apples, bacon, syrup, broth and pepper and bring to a simmer.  Cook 15-30 minutes or until liquid is reduced and greens are very tender.
